鮮甜大地魚湯頭,爽口彈牙的竹昇麵,薄薄雲吞皮包裹著大隻鮮蝦,一碗下肚便心滿意足。還記得初次光顧只點了細蓉(小碗雲吞麵),三扒兩撥就吃完,心想下次一定要點大碗。結果第二次點了大碗,吃到一半,麵開始變淋,才發現「細蓉」是最好食的。自始之後每次光顧,不管肚子餓不餓都只會點小碗。

年少時光顧的雲吞麵鋪都是正常湯麵碗,沒有覺得驚為天人,只覺得這是普通麵食。後來中學某天要到銅鑼灣參加活動,在附近的麥奀記點了餐單上最便宜的雲吞麵,來到時是小小一碗,才知道原來雲吞麵叫「細蓉」是這個意思。

從來沒有刻意去尋找全香港最好食的雲吞麵,但意外吃過上環的麥奀記(忠記)的雲吞麵後,有時人在異地想起香港溫暖的食物,總會想起這裡的大地魚湯、爽口的竹昇麵和大大的鮮蝦雲吞。

The broth is sweet and deeply savoury from dried flounder, the bamboo-pressed noodles are springy and pleasantly firm, and each paper-thin wonton wrapper holds a whole plump prawn. One bowl is enough to leave you completely satisfied.

I still remember my first visit, when I ordered only a sai yung — a small bowl of wonton noodles. I finished it in just a few bites and thought to myself that I would definitely order the large bowl next time. So on my second visit, I did. But halfway through, the noodles began to soften, and that was when I realised: sai yung is actually the best way to enjoy wonton noodles. Ever since then, no matter how hungry I am, I always order the small bowl.

When I was younger, the wonton noodle shops I visited all served their noodles in regular-sized soup bowls. I never thought there was anything particularly remarkable about them; to me, wonton noodles were simply an ordinary kind of noodle dish. Then one day in secondary school, I had to attend an event in Causeway Bay. I stopped by Mak An Kee nearby and ordered the cheapest item on the menu — wonton noodles. When this tiny bowl arrived, I finally understood why a small bowl of wonton noodles is called sai yung.

I have never deliberately set out to find the best wonton noodles in Hong Kong. But after stumbling upon the wonton noodles at Mak An Kee (Chung Kee) in Sheung Wan, this has become one of the places that comes to mind whenever I am away from Hong Kong and find myself craving the comforting flavours of home: the fragrant dried-flounder broth, the springy bamboo-pressed noodles, and those generously sized fresh prawn wontons.
