Three visits, yet these are the only two food photos I have to show for them. My first visit was in winter, when the seafood was at its plumpest and most flavourful. The very first piece of sushi had me exclaiming at how fresh and delicious it was. One piece followed another, and only after finishing did I realise I hadn’t taken a single photo. My second visit was in early summer. After enjoying sea snail and shellfish sushi with a lovely bite and natural sweetness, followed by miso soup packed with scallops, I once again left without taking any photos. Before my third visit, I’d eaten a rice ball, so I finally wasn’t wolfing everything down. With enough presence of mind this time, I managed to take two photos.
Toriton (トリトン) is a conveyor-belt sushi chain from Hokkaido. Its growing popularity in recent years has led to a handful of branches opening elsewhere in Japan. Our original plan for Sapporo was to book a high-end sushi restaurant, but February is peak travel season, with visitors flocking to Hokkaido to ski. By the time we set off, we still hadn’t managed to secure a reservation at any of the high-end sushi restaurants.
Only after arriving did we scramble for recommendations from a Hongkonger living locally, which led us to Toriton’s best-known branch, Kita 8-jo Kosei We arrived at around 5pm but weren’t seated until after 7pm. Luckily, there was a huge drugstore nearby with plenty to browse, so we had no trouble passing the time. Most of the people waiting were Japanese. A place that even the locals are willing to queue for has to be doing something right. Best of all, the bill has only ever come to around ¥2,000–3,000 per person, despite us leaving absolutely stuffed each time. I still can’t quite understand how.
Pictured below are Hokkaido autumn salmon sushi and scallop miso soup. Most of the salmon we eat in Hong Kong comes from Norway, so the chance to try salmon from Hokkaido was too good to pass up.
